Vegetable Skewers Recipe
This one is for the veggie lovers! Here's a delicious vegetable kebab skewers recipe for your BBQ week:
Ingredients:
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 1 zucchini, sliced into rounds
- 1 red onion, cut into chunks
- 8-10 cherry tomatoes
- 8-10 button mushrooms
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Wooden skewers, soaked in water for 30 minutes
Instructions:

In a bowl, whisk together the olive oil, balsamic vinegar, minced garlic, dried oregano, salt, and pepper to make the marinade.

Thread the vegetables onto the soaked wooden skewers, alternating between the different veggies. Leave some space between each piece to ensure even cooking.

Place the assembled skewers in a shallow dish and pour the marinade over them. Make sure the skewers are evenly coated. You can also use a brush to coat the veggies with the marinade.

Cover the dish and let the skewers marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavour.
